SPICED POTATO STUFFING

Ingredients:

  •  4 cups diced potatoes
  • 1 cup diced onions
  • 1 cup diced bell peppers (any color)
  • 1 cup diced carrots
  • 2 cloves garlic, minced
  • 2 tablespoons vegetable oil
  • 1 teaspoon cumin seeds
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder (adjust to taste)
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)


Instructions:

1. Boil the diced potatoes until they are just tender. Drain and set aside.

2. In a large pan, heat vegetable oil over medium heat. Add cumin seeds and let them sizzle.

3. Add diced onions and sauté until they become translucent.

4. Stir in minced garlic and cook for another minute until fragrant.

5. Add diced bell peppers and carrots to the pan. Sauté until the vegetables are slightly softened.

6. Toss in the boiled potatoes and mix well.

7. Sprinkle ground coriander, ground cumin, turmeric powder, red chili powder, salt, and pepper over the mixture. Stir to evenly coat the vegetables with the spices.

8. Cook the spiced potato stuffing for an additional 5-7 minutes, allowing the flavors to meld.

9. Taste and adjust the seasonings as needed.

10. Garnish with fresh cilantro if desired.
