Ingredients:

  • 4 cups mashed potatoes
  • 2 cups finely shredded kale or cabbage
  • 1/2 cup butter
  • 1 cup milk
  • Salt and pepper to taste
  • Optional: 1/2 cup bread crumbs & 1/4 cup melted butter for topping

Instructions:

  • In a large mixing bowl, combine the mashed potatoes and finely shredded kale or cabbage.
  • In a saucepan, heat the butter and milk until the butter is melted. Season with salt and pepper.
  • Pour the warm butter and milk mixture over the mashed potato and kale/cabbage mixture. Stir well to ensure even distribution of ingredients.
  • Transfer the mixture to a baking dish, spreading it evenly.
  • Optional: Top the potato mixture with breadcrumbs, then drizzle the melted butter on top.
  • Bake in a preheated oven at 350°F (175°C) for approximately 30 minutes or until the top is golden brown.
