Ingredients:

- 100g chopped apples
- 50g chopped almonds or walnuts
- Zest and juice of 1 orange and 1 lemon
- 100g suet or vegetarian suet
- 150g dark brown sugar
- 1 tsp mixed spice
- ½ tsp ground cinnamon
- ½ tsp ground nutmeg
- 3 tbsp brandy or rum (optional)
For the Pastry:
- 250g plain flour
- 125g cold unsalted butter, diced
- 1 tbsp icing sugar
- 1 egg yolk
- 2-3 tbsp cold water
Instructions:
- Prepare the Mincemeat:
- Mix all mincemeat ingredients in a bowl, cover, and let it rest in a cool place for at least 24 hours to allow flavors to meld.
- Make the Pastry:
- In a large bowl, sift the flour and add diced butter. Rub the mixture together until it resembles breadcrumbs.
- Stir in icing sugar, egg yolk, and cold water. Mix until the dough forms. Wrap it in cling film and chill for 30 minutes.
- Assemble the Pies:
- Preheat oven to 390°F (200°C)
- Roll out two-thirds of the pastry on a floured surface and cut circles to line a muffin tin.
- Fill each pastry-lined hole with a spoonful of mincemeat.
- Roll out the remaining pastry and cut smaller circles or shapes to top the pies. Press edges together to seal.
- Brush the pies with a little beaten egg or milk.
- Bake:
- Bake for 15-20 minutes until the pastry turns golden brown.
- Allow cooling in the tin for a few minutes, then transfer to a wire rack.
