TRADITIONAL IRISH LEEK PIE

Ingredients:

  • For the Filling:

    • 2 large leeks, washed and sliced
    • 1 large onion, finely chopped
    • 200g cooked ham, diced (optional)
    • 2 tablespoons butter
    • 1 tablespoon olive oil
    • Salt and black pepper to taste
    • 2 tablespoons fresh parsley, chopped
    • 2 tablespoons all-purpose flour
    • 300ml chicken or vegetable broth
    • 100ml heavy cream

     

  • For the Pastry:

    • 1 sheet of store-bought puff pastry or homemade pastry
    • 1 egg, beaten (for egg wash)

 

Instructions:

  1. Preheat your oven to 180°C (350°F).

For the Filling:

  1. In a large skillet, melt the butter and olive oil over medium heat. Add the chopped onions and cook until they become translucent, about 3-4 minutes.

  2. Add the sliced leeks and diced ham (if using) to the skillet. Sauté them for an additional 5 minutes or until the leeks are tender and the ham is slightly browned.

  3. Sprinkle the flour over the leek and ham mixture. Stir well to combine, allowing the flour to cook for about 2 minutes.

  4. Gradually add the chicken or vegetable broth while stirring constantly. This will create a thick, creamy sauce.

  5. Stir in the heavy cream, chopped parsley, and season with salt and black pepper. Simmer for another 2-3 minutes until the filling thickens. Remove it from heat.

For the Pastry:

  1. Roll out the puff pastry on a floured surface to fit your pie dish.

  2. Transfer the leek and ham filling into the pie dish, spreading it out evenly.

  3. Place the rolled-out pastry on top of the pie dish, sealing the edges by pressing them with a fork.

  4. Brush the beaten egg over the pastry for a golden finish.

  5. Bake in the preheated oven for approximately 35-40 minutes or until the pastry is puffed and golden brown.

  6. Remove from the oven and allow the pie to cool slightly before serving.

Serving:
