CHAMP

Description: Champ is a traditional Irish dish made with mashed potatoes, butter, milk, and green onions. It’s a simple and comforting dish that’s perfect as a side dish for meat or fish.

Preparation time: Approximately 10 minutes.

Cooking time: Approximately 20-25 minutes.

Serving size: This recipe serves 4 people as a side dish.

 

Ingredients:

  • 2 lbs potatoes, peeled and cubed
  • 1/2 cup milk
  • 1/2 cup unsalted butter
  • 4 green onions, chopped
  • Salt and pepper to taste

Instructions:

  1. Boil the potatoes in a pot of salted water until tender, about 15-20 minutes.
  2. While the potatoes are cooking, heat the milk and butter in a small saucepan over low heat until the butter has melted.
  3. Drain the potatoes and return them to the pot. Mash the potatoes with a potato masher or fork until they are smooth and free of lumps.
  4. Add the milk and butter mixture to the potatoes, and stir until well combined.
  5. Stir in the chopped green onions, and season with salt and pepper to taste.
  6. Serve hot, garnished with additional green onions if desired.
