IRISH FISH AND CHIPS

Description: A classic dish of battered and fried fish served with french fries or “chips”.

Preparation time: 20 minutes

Cooking time: 20 minutes

Serving size: 4 servings

  • 2 lbs cod fillets, cut into large pieces
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 1/2 cups cold beer
  • Vegetable oil, for frying
  • 4 large potatoes, peeled and cut into thick fries
  • Salt, to taste

  1. Preheat the oven to 200°F. Place a baking sheet in the oven.
  2. In a large bowl, whisk together the flour, baking powder, salt, and pepper.
  3. Add the cold beer to the dry ingredients and whisk until the batter is smooth.
  4. In a large pot or Dutch oven, heat about 2 inches of vegetable oil over medium-high heat.
  5. Pat the cod fillets dry with paper towels.
  6. Dip each fillet in the batter, coating it evenly.
  7. Carefully lower each fillet into the hot oil and fry until golden brown, about 4-5 minutes per side.
  8. Using a slotted spoon or tongs, remove the fish from the oil and transfer it to a paper towel-lined plate to drain excess oil.
  9. Keep the cooked fish warm in the preheated oven while you fry the remaining fish.
  10. Meanwhile, fry the potato fries in the hot oil until golden brown and crispy, about 3-4 minutes per batch. Drain the fries on a paper towel-lined plate and season with salt.
  11. Serve the fish and chips hot with your favorite dipping sauce, such as tartar sauce or malt vinegar. Enjoy!
