IRISH POTATO SOUP

Description: A warm and comforting soup made with potatoes, onions, broth, and often garnished with herbs or cream.

Preparation time: 10-15 minutes

Cooking time: 30-40 minutes

Serving size: 4-6 servings

  • 4 medium-sized potatoes, peeled and diced
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 4 cups of chicken or vegetable broth
  • 1 cup of heavy cream
  • 2 tablespoons of butter
  • Salt and pepper, to taste
  • Optional toppings: grated cheddar cheese, chopped green onions, crumbled bacon
  •  
  1. In a large pot, melt the butter over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
  2. Add the diced potatoes and broth to the pot. Bring the mixture to a boil, then reduce the heat and let it simmer until the potatoes are tender, about 15-20 minutes.
  3. Using an immersion blender or transferring the soup to a blender, puree the soup until smooth.
  4. Add the heavy cream to the pot and stir to combine. Cook for another 5-10 minutes until heated through.
  5. Season with salt and pepper to taste. Serve hot with optional toppings if desired.
